Creamy Tomato Tortellini Soup with Grilled Cheese Dippers

🧂 Ingredients (Serves 4)

• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 tsp dried basil or Italian seasoning
• 1 can (28 oz) crushed tomatoes
• 2 cups vegetable or chicken broth
• 1/2 cup heavy cream or milk
• 1 package refrigerated cheese tortellini (about 9 oz)
• Salt & pepper to taste
• Optional: fresh basil, grated Parmesan

Grilled Cheese Dippers

• 4 slices bread (sourdough or sandwich bread)
• 4 slices cheese (cheddar, mozzarella, or American)
• Butter for grilling

1. In a large pot, heat olive oil over medium heat. Sauté onion until soft, then add garlic and seasoning.
2. Stir in crushed tomatoes and broth. Simmer 10 minutes.
3. Add cream and tortellini. Cook until pasta is tender (about 5–7 minutes).
4. Season with salt, pepper, and optional Parmesan.
5. Grill cheese sandwiches in a pan until golden. Slice into strips for dipping.
