💡 Did You Know?

 

Long before Lake Mohawk's boardwalk and golf clubs, Sparta Mountain was the site of one of Thomas Edison's most ambitious - and costly -  experiments. In 1889, the great inventor poured $3.5 million into his Edison Ore-Milling Company, building an iron processing complex on 2,500 acres right here on Sparta Mountain. He was convinced he could revolutionize iron production. For nearly a decade he worked tirelessly on the project — ultimately investing $2 million of his own personal fortune. It didn't work. Minnesota's iron mines produced ore at half the cost, and by 1899 Edison shut the whole operation down. Ever the optimist, he reportedly shrugged it off, saying he could always get a job as a telegrapher for $75. A monument marking the site still stands on Edison Road today. 🏭

Spotlight Recipe of the Week

Hearty Beef & Bean Chili with Skillet Cornbread

 

Your Cold Snap Survival Dinner - when Thursday's rain and snow roll in, this is exactly what Sparta ordered. 🌨️

Ingredients

  • 1.5 pounds ground beef
  • 2 canned diced tomatoes
  • 2 canned kidney beans, drained
  • 1 canned black beans, drained
  • 3 tablespoons tomato paste
  • 1 cups beef broth
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoons ground cumin
  • 1 teaspoons smoked paprika
  • 1 salt and black pepper
  • 1 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cornbread mix (or homemade)
  • 2 tablespoons butter
  • 1 tablespoons honey

Steps

Brown the beef: In a large heavy pot over medium-high heat, brown 1.5 pounds ground beef with 1 yellow onion, diced. Break up the meat as it cooks. Drain excess fat, then add 4 garlic cloves, minced and cook 1 more minute until fragrant.
Build the base: Stir in 2 tablespoons chili powder1 teaspoons ground cumin, and 1 teaspoons smoked paprika. Toast the spices in the beef for 1 minute  — this step is the secret to deep flavor. Add 3 tablespoons tomato paste and stir to coat everything.
Add liquids & beans: Pour in 2 canned diced tomatoes1 cups beef broth2 canned kidney beans, drained, and 1 canned black beans, drained. Stir well, scraping up any bits from the bottom. Season generously with 1 salt and black pepper.
Simmer low & slow: Bring to a boil, then reduce heat to low. Cover partially and let it simmer — the longer the better. Minimum 60 minutes , but an hour makes it incredible.
Make the cornbread: While chili simmers, preheat oven to 400°F. Melt 2 tablespoons butter in a cast iron skillet (or 8x8 pan). Prepare 1 cornbread mix (or homemade) per package instructions, stir in 1 tablespoons honey for a touch of sweetness. Pour into skillet and bake until golden.
Serve & top: Ladle chili into deep bowls. Top with 1 cups shredded cheddar cheese and a dollop of 1/2 cup sour cream. Serve with a warm wedge of cornbread alongside. Light a candle. Put on some good music. Wednesday never felt so good. 🕯️

Notes

Why this is perfect for this week: Tuesday hits 70°F - enjoy it! But by Thursday the temperature crashes with rain and snow, and Friday drops to 39°F. This chili actually gets BETTER the next day, so make a big pot Wednesday night and you'll have the perfect cold-snap meal ready when Friday's deep freeze hits. All pantry staples, nothing fancy required.

 

🎵 Vibe Pairing: Put on some Norah Jones, Otis Redding, or a lo-fi jazz playlist. Dim the lights. Let the chili do the rest. This is a candles-on-the-table, nowhere-to-be kind of meal — and after the week Sparta's had, you deserve exactly that.
