    Over 30 dogs were abandoned in multiple Sussex County locations on March 16 Spartaindependent, with approximately six to eight small dogs found left in open crates without food or water at each location NewsBreak in Stillwater, Lafayette, and Wantage. Three Phillipsburg residents have since been charged with animal cruelty. Authorities and volunteers continue working to care for the rescued animals.

The Iron That Built America Came From Right Here

Long before Lake Mohawk drew vacationing New Yorkers to Sussex County, this region was one of the most industrially vital places in early America - and it was iron that put it on the map.

The iron ore deposits throughout Sussex County and the surrounding Highlands were first mined seriously in the mid-1700s, and the region quickly became one of colonial America's most important iron-producing centers. The famous Oxford Furnace in nearby Warren County, established in 1741, was one of the earliest iron furnaces in New Jersey and supplied essential materials during the Revolutionary War - including cannon and cannonballs used by Washington's Continental Army.

Closer to home, the village of Sparta itself developed in part around the anchor-forging and iron industries that thrived along local waterways. The fast-moving streams that carved the valleys you drive through today once powered the bellows and trip-hammers of forges that helped arm a revolution. The iron heritage is baked into the very landscape - in place names, in old stone foundations along creek beds, and in the character of a community that has always known how to build things that last.

Spotlight Recipe of the Week

Lemon Herb Roasted Chicken Thighs with Spring Vegetables

Thursday is calling your name - and so is your oven.

With temperatures hitting a gorgeous 68°F on Thursday, the week is giving you exactly one perfect spring day before the rain rolls back in Friday. This recipe is built for that energy - bright, fresh, and satisfying without being heavy. Get it going Wednesday evening and you'll have the whole thing ready to reheat Thursday if you want, or cook it fresh while the warm air drifts through an open window.

Servings: 4

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1 lemon, sliced into rounds
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups baby potatoes, halved
  • 1 cup baby carrots
  • 1 zucchini, sliced into rounds
  • Fresh parsley for garnish


Steps:

1. Marinate the chicken Combine olive oil, garlic, oregano, thyme, smoked paprika, salt, and pepper. Coat chicken thighs thoroughly and let sit for at least 30 minutes - or overnight in the fridge for even better flavor.

2. Prep the vegetables Toss baby potatoes and carrots with a drizzle of olive oil, salt, and pepper. Spread in a single layer in a large baking dish.

3. Assemble and roast Preheat oven to 425°F. Nestle chicken thighs on top of the vegetables, skin side up. Tuck lemon slices around the pan. Roast for 40-45 minutes until skin is golden and crispy and chicken reaches 165°F internally.

4. Add zucchini At the 25-minute mark, add zucchini slices to the pan. They cook faster and will be perfectly tender by the time the chicken is done.

5. Rest and serve Let rest 5 minutes. Garnish with fresh parsley and serve straight from the pan with crusty bread to soak up those pan juices.

Why this works this week: Tuesday is cold and crisp - a great day to prep your marinade. Wednesday is the perfect cook night before the temperature spikes. Then Thursday, when Sparta hits that glorious 68°F, you can enjoy this bright, spring-forward meal and celebrate the season actually arriving. And when Friday's rain shows up right on schedule, you'll be glad you made the most of it.

Roscoe didn't ask for any of this. At 12 years old, this gentle soul was living the only life he knew - curled up beside the person who loved him most - when his owner passed away in Virginia. With nowhere to turn, Roscoe made the long journey north to Father John's Animal Haven in Lafayette, where the staff immediately fell in love with this dignified, sweet-natured senior who carries his years with quiet grace.

Don't let the number fool you. At about 12 years old, Roscoe still has enough energy to go out on walks, meet people, and meet other dogs. Fatherjohns He's just under 50 pounds, well-proportioned, and for a senior, the staff says he looks fantastic. Yes, he has some arthritis developing in his hind end - but that hasn't dimmed his spirit one bit. He still wags. He still wants to see what's around the next corner. He still has love to give.

What Roscoe needs now is simple: a calm home where he can spend his remaining years feeling safe, loved, and warm. No drama, no chaos - just someone who understands that adopting a senior dog isn't a sad story. It's one of the most beautiful things a person can do. You won't get years of puppyhood with Roscoe - but you will get pure, grateful, unconditional love from a dog who has been through loss and still chooses to trust.

Roscoe deserves a warm home to spend every one of his remaining days feeling like the good boy he has always been. Will you be his person?
